This is my first year of college living off campus, without the cafeteria. YAY!
I have a few basic cookbooks but would like some new ideas. I have basic to moderate cooking skills, I am really good with chicken, but a little shaky with beef. I need to get better at working with beef because my boyfriend is a ranch kid and we get free beef (every type imaginable.) I have pots and pans, baking dishes, a good oven and a tiny BBQ grill.
I am basically looking for any Recipe that is quick, tasty and made from relatively cheap and easy to find ingredients.
Main courses, side dishes, and Desserts would all be appreciated.
Thanks a bunch!
Ok guys, Spaghetti? Honestly?
I know how to cook dishes like bacon wrapped chicken in creamy mushroom sauces and can pretty much follow the majority of recipes, I just need practice.
Tender Braised Beef
1 green onion, trimmed and cut into 2-inch pieces
1/4 cup sherry
3 garlic cloves, crushed
1 teaspoon grated peeled ginger root
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 1/2 tablespoons peanut oil
2 1/2 pounds chuck steak, cubed
3 cups chicken broth
Whisk together green onion with sherry, garlic, ginger, sugar, salt and pepper in small bowl; set aside.
Heat peanut oil in heavy skillet over medium-high heat; brown steak quickly on all sides. Add the sherry mixture and cook, stirring, for about 3 minutes. Add chicken broth and simmer, covered, for 1 1/2 to 2 hours or until meat is tender.
Thicken up the liquid for gravy.
Serve with mashed potatoes, steamed green peas and cauliflower.
