Good Recipes for a new cook?

This is my first year of college living off campus, without the cafeteria. YAY!
I have a few basic cookbooks but would like some new ideas. I have basic to moderate cooking skills, I am really good with chicken, but a little shaky with beef. I need to get better at working with beef because my boyfriend is a ranch kid and we get free beef (every type imaginable.) I have pots and pans, baking dishes, a good oven and a tiny BBQ grill.
I am basically looking for any Recipe that is quick, tasty and made from relatively cheap and easy to find ingredients.
Main courses, side dishes, and Desserts would all be appreciated.

Thanks a bunch!
Ok guys, Spaghetti? Honestly?
I know how to cook dishes like bacon wrapped chicken in creamy mushroom sauces and can pretty much follow the majority of recipes, I just need practice.

Tender Braised Beef

1 green onion, trimmed and cut into 2-inch pieces
1/4 cup sherry
3 garlic cloves, crushed
1 teaspoon grated peeled ginger root
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 1/2 tablespoons peanut oil
2 1/2 pounds chuck steak, cubed
3 cups chicken broth
Whisk together green onion with sherry, garlic, ginger, sugar, salt and pepper in small bowl; set aside.
Heat peanut oil in heavy skillet over medium-high heat; brown steak quickly on all sides. Add the sherry mixture and cook, stirring, for about 3 minutes. Add chicken broth and simmer, covered, for 1 1/2 to 2 hours or until meat is tender.
Thicken up the liquid for gravy.
Serve with mashed potatoes, steamed green peas and cauliflower.

Sweet Magic: Easy Recipes for Delectable Desserts

Long before award-winning chef Michel Richard made his first "cOte de boeuf" or prepared his first foie gras terrine, he was a pastry chef. In Los Angeles, pastry lovers lined up outside his bakeshop on Wilshire Boulevard, waiting to enjoy the breads and treats they’d heard were the best in town, maybe even better than anything in Paris. Now, in this outstanding collection, the superstar chef returns to his first love, the food that made him famous–desserts. Here are mouthwatering, foolproof recipes for American favorites such as pecan pie and pound cake; Richard’s personal inventions, such as Floating Islands with Melted Chocolate Morsels and the "coffee cloud"; reinvented French classics, such as profiteroles and the Christmas log ("bUche de NoEl"); fruit favorites, including tarts and Pavlovas; and, of course, plenty of cookies. Going beyond traditional cookbooks, "Sweet Magic" shares Richard’s insights into the thinking and craft behind every aspect of dessert, with brief essays that explore, explain, and entice–highlighted by the chef’s own playful illustrations. Creating exquisite dishes with only a few simple ingredients–butter, eggs, sugar, flour, chocolate–demands the instincts of an artist and the soul of a magician. "Sweet Magic" will unlock the inner dessert wizard in every home chef, guiding both newcomers and old hands past common missteps, to seduce the most flavor and texture from every ingredient.

Pure Dessert

Pure Dessert

$29.61

A refreshing change in every respect When you are working with great ingredients, you want to keep it simple. You don’t want to blur flavor by overcomplicating. This is why Pure Dessert, from the beloved Alice Medrich, offers the simplest of recipes, using the fewest ingredients in the most interesting ways. There are no glazes, fillings, or frostings–just dessert at its purest, most elemental, and most flavorful. Alice deftly takes us places we haven’t been, using, for example, whole grains, usually reserved for breads, to bring a lovely nutty quality to cookies and strawberry shortcake. Pound cake takes on a new identity with a touch of olive oil and sherry. Unexpected cheeses make divine souffles. Chestnut flour and walnuts virtually transform meringue. Varietal honeys and raw sugars infuse ice creams and sherbets with delectable new flavor. Inspired choices of ingredients are at the heart of this collection of entirely new recipes: sesame brittle ice cream, corn-flour tuiles with tangy sea salt and a warming bite of black pepper, honey caramels, strawberries with single-malt sabayon. To witness Alice’s idea-stream as she describes how she arrived at each combination is to instantly understand why three of her books have won Best Cookbook of the Year. She’s an experimenter, tinkerer, and sleuth, fascinated with trial and error, with the effects of small changes in recipes, exploring combinations tirelessly and making remarkable discoveries. Does cold cream or hot cream do a better job coaxing out the flavor of mint leaves or rose petals? Why is it that dusting a warm brownie with spices gives it an enticing aromatic nose, whereas putting the spice in the batter blurs the chocolate flavor? Do cooked strawberries or raw make for the better sorbet? Loaded with advice and novel suggestions, with great recipes and eye-catching, full-color photographs that show off these simple, straightforward desserts, Pure Dessert is an education and a revelation. Thank you, Alice

An accomplished teacher as well as a master chef, he now shares his expertise with home cooks in "Dessert University." This beautifully illustrated volume is a complete course in making the full spectrum of spectacular sweets — from breakfast pastries, cookies, and pies to fresh-fruit desserts, frozen confections, and cakes. Recipes in each chapter are organized from the simplest to the most complex, and Chef Mesnier walks you through each step, pointing out common mistakes and offering insights on technique gained from his years as a professional. Most of these recipes need few special ingredients and almost no fancy equipment; nearly everything can be purchased at a well-stocked supermarket, department store, or kitchen supply store. Chef Mesnier includes tips on techniques, ingredients, and serving suggestions, and offers home cooks practical advice, such as how to fill and use a pastry bag and the best way to whip egg whites. A resource list is also included, so cooks can find the more unusual ingredients they need to make these delectable creations. Mesnier starts off with his fresh-fruit desserts, including uniquely wonderful recipes such as Bananas in Raspberry Cream, Blueberry Fool, and Poached Peaches with Chestnut Mousse. He moves on to creamy custards, puddings, souffles, mousses and Bavarians, ice creams, meringues, crepes, and breakfast treats (including buttery brioche and croissant doughs). Chef Mesnier’s cookie and bar recipes will fill your cookie jar with such treats as Chocolate Chip Cookies, Almond Crescents, Orange Butter Cookies, Brownies, and Florentine Squares. There are sweet and savory tarts, and cakes ranging from the simple (Lemon Pound Cake) to the unusual (Peanut Butter and Jelly Roulade Cake) to the sophisticated (Chocolate Champagne Mousse Cake). Ambitious home cooks can even try their hand at making chocolate candy and sugar decorations. A chapter on syrups, sauces, and other dessert components completes the book. More than fifty black-and-white line drawings throughout illustrate Chef Mesnier’s instructions for the more complicated recipes, and there are sixteen stunning color photographs of finished desserts. Home cooks and professionals spend hundreds of dollars in formal cooking classes to learn what masters like Roland Mesnier have to teach. In "Dessert University, " Chef Mesnier has distilled the experience and expertise of an extraordinary career into one accessible, user-friendly volume.
