Cupcake Recipe
What is a fool-proof caramel Cupcake Recipe?
I’m the main baker at a cupcake shop, and the recipe we have falls, no matter how you add the caramel, or how its baked. Any recommendations?
Caramel Cake
Ingredients:
•3 1/2 cups all-purpose flour, sifted before measuring
•2 teaspoons baking powder
•1 cup (2 sticks) butter, softened
•2 cups granulated sugar
•6 eggs
•1 cup milk
•1 teaspoon vanilla extract
•***Frosting/Filling***
•3 cups packed light brown sugar
•2 tablespoons corn syrup
•3 tablespoons butter
•dash of salt
•3/4 cup cream
•1 teaspoon vanilla
Preparation:
Butter 2 9-inch layer cake pans; line the bottoms waxed paper. Butter the paper.
Sift the sifted flour and baking powder into a bowl. In a large mixing bowl, cream the butter until light, then gradually add the sugar, beating until creamy. Add the eggs, one at a time, and beat well after each addition. Stir in the flour mixture, a little at a time, alternately with the milk, beginning and ending with flour mixture. Stir well after each addition, but do not beat. Stir in the vanilla extract. Turn the batter into prepared cake pans. Bake in a preheated 325° oven until the cakes spring back when lightly touched near the center with a finger, about 35 minutes. Cool layers 10 minutes in the pans, then turn out onto cake racks to cool completely.
Caramel Mudcake Cupcake Recipe
Ingredients
3½ oz (100g) white chocolate, coarsely chopped
4½ oz (125g) butter, coarsely chopped
2/3 cup brown sugar
¼ cup golden syrup
2/3 cup milk
1 cup plain flour
1/3 cup self-raising flour
1 egg, lightly beaten
Method
1 Preheat the oven to 330°F (170°C).
2 Line a 12 cupcake pan, with cupcake papers.
3 Combine the chocolate, butter, sugar, syrup and milk in a saucepan.
4 Stir over a low heat until melted and combined. (I had a few small bits of white choc that just would not combine – not a problem).
5 Allow to cool for about 15 minutes.
6 Sift the flours.
7 Mix flours into the caramel mixture.
8 Next, stir in the egg.
9 Divide the mixture evenly between the cake cases.
10 Bake for 30 minutes.
11 Remove tin from the oven, transfer to rack and cool.
Frosting:
In large saucepan,combine ingredients and mix well to blend. Bring to a boil; cover and cook 3 minutes. Uncover and cook to 238° on candy thermometer or until soft ball forms when dropped in cold water. Cool for 3 minutes. Beat until thick and spreadable. It should begin to lose its glossiness.

Personalised Party Bag Baking Mixes $32 Imagine a party bag that involves no cheap plastic toys, is lots of fun, tastes delicious and doesn’t fill your home with unwanted clutter! Welcome to Scarlet Bakes latest creation! Innovative, exciting and delicious party bag baking mixes which and themed. Choose from our wide range of designs to co-ordinate with your child’s party. We offer two types of mix – our Chocpoptastic no bake, chewy, crispy chocolate cake or a more traditional shortbread. You can even add some little extras like wooden spoons, rolling pins or cutters to make an extra special goodie bag. We have a minimum order quantity of eight bags and you can then order in multiples of four. Chocpoptastic is our yummy new recipe! Each mix makes 10 cakes – cupcake cases are supplied in the bag. Ingredients are Chocolate, Rice Crispies, Raisins and Marshmallows. Instructions are very simple to follow – just melt butter and stir in the dry ingredients until chocolate has melted. Spoon into paper cases and leave to set if you can. They never seem to last that long in this house! Our gorgeous Shortbread mix will make 12 2″ round biscuits. Ingredients include wheat flour, rice flour and sugar. To make simply cream some butter then mix in all the dry ingredients. Roll into a log shape, wrap in clingfilm and refrigerate for 15 minutes. Remove clingfilm, slice into 1cm thick rounds and bake. Full instructions are included on each mix. No artificial colours, flavours or preservatives. Sorry neither mix is suitable for people with gluten or nut allergies. |
