. Try the double chocolate cookies, or something with chocolate chips.
Crumble the cookies into pieces. Take a wine glass and spoon in some custard. Then sprinkle on some of the cookie chunks. Then spoon on cream, or creme fraiche. If you like you can continue to layer cookie pieces and cream, ice cream, custard, creme fraiche, etc. When you get to the top of the wine glass, place a few raspberries or other soft fruit on top. If you like, you can heat these in a pan to create a coolis or hot berry sauce. This is a great way to contrast hot and cold, smooth and crunchy.
