What and why the use of dates in vegan Recipes?

I am exploring some vegan recipes. I found quite a lot of use of dates in the recipes. Why is that?

Thanks.

They’re sticky and sweet so they bind dessert-type foods together without the use of eggs, while reducing the need for refined sugar.

This is particularly true for raw vegan recipes, because some egg substitutes such as corn starch require heating to be effective.
